Lebanese and Moroccan Cooking Classes in 2023

Offering great value for money, our cooking classes are a treat for you and all your family, friends and work colleagues. The Lebanese and Moroccan classes cover a range of healthy, quick and very tasty traditional meals, including vegetarian and vegan options that are easy to prepare. You will learn how to cook, store and make three or more authentic dishes. Everyone prepares and helps to put together the meal and at the end of each session, we all sit down with a drink to have a well earned lunch. All participants will take home all the recipes and general cooking tips as well as a free gift. We are happy to make special arrangements for organised groups and birthday parties.

Stuffed Aubergines for the 14th January, 2023.
at 11:00 am – 2:00 pm.

1. Tabouleh, traditional Lebanese salad with parsley, mint, tomatoes and cracked wheat.
2. Hummus, chickpea dip with tahini and lemon juice.
3. Sheikh Al Mahshi, aubergine stuffed with minced meat, onion, spices and nuts cooked with lemon, tomato and dried mint sauce.
4. Riz, vermicelli rice.

Slow Roasted Leg of Lamb for the 28th January, 2023.  
at 11:00 am – 2:00 pm.

1. Fatoush, traditional Lebanese salad with parsley, mint, tomatoes, sumac sauce and toasted flat bread.
2. Baba Ghanouj, smoked aubergine dip with lemon juice and pomegranate seeds.
3. Fakhed Maa Al Riz, aromatic leg of lamb slowly cooked with Lebanese spices.
4. Riz, aromatic rice with spices and nuts.

Moroccan Lamb Tagine for the 4th February, 2023.
at 11:00 am – 2:00 pm.

1. Carrot and Beetroot salad with cumin, honey and orange sauce.
2. Lamb Tagine marinated in Moroccan spices cooked with dried fruits.
3. Couscous with olive oil and herbs.
4. Baklava with walnut stuffing drizzled with orange blossom syrup.

Moroccan Bistilla for the 11th March, 2023.
at 11:00 am – 2:00 pm.

1. Freekeh salad with split chickpeas, olive and black sesame an nuts.
2. Chicken Bistilla, breast fillets marinated in Moroccan spices and herbs, wrapped in phyllo pastry and topped with sugar and cinnamon.
3. Ousmallieh, kadaif pastry topped with ricotta cheese and double cream and drizzled with rose water syrup and pistachio nuts.
